Click to enlarge Boneless ham and Block are two types of our bodega's hams. All of our Boneless hams have been cured during a period of ten months and they are an excellent product to be slicing because they haven't got bone. There is also a block version of this kind of ham to take the maximum advantage of its meat.
In our Bodega's ham we take away the bone in an artisan and totally manual way when it has finished its cure. Once the bone has been removed from the ham, we make an extra cure process in which the meat's ham is completely stabilized.
