BODEGA: Ham with Leg and Boned Ham Ref#: 1311/ 1303
Click to enlarge There are two different versions of our Bodega's Ham: Ham with leg and Boned Ham. Both of them have been cured during, at least, ten months.
This type of ham makes its cure very slowly in cold storage rooms which simulate the most favourable climate for its maturation during a period of ten months. With all of these parameters we obtain a product with a characteristic COLOUR which goes from the pink to the purple-red in the meat part, and a brilliant appearance, and a bit greasy, in the fat part. It is homogeneous in the CUT and the meat has a delicate and little salty FLAVOUR, with a pleasant and characteristic bouquet.
